Drive you Bananas Scrumptious Banana Nut Bread !!!

This just happened, almost involuntarily, honest!

I had

2 deteriorating bananas

3 cups of bonafide flour

1 1/4 tsp. baking powder

1/2 tsp.baking soda

1/4 tsp. salt

1/4 stick butter, from old packet melted

1/2 cup canola oil

three eggs leftover in the carton aging rapidly

3/4 cup sugar left in a no-sweets household

1 cup milk left before our next grocery trip

1 cup broken walnut bits, secreted from my husband’s nut stash

1 tbsp. vanilla essence

So, I pre-heated the oven at 350, or so, didn’t have my glasses on…….

Then I mashed the bananas in a large mixing bowl.

Sifted the flour with the baking soda, baking powder, and salt onto the mashed fruit

Added the butter, oil, eggs, sugar,  milk, nuts, essence and  whipped like mad for 1 minute.

In the meanwhile I had prepared two loaf pans, as taught by my western cuisine guru, Shelagh, she knows who she is,  i.e.,rubbed the insides with butter and lightly dusted with flour.

Poured the batter into the pans, placed them in the heart of the heated oven and went to have breakfast.

Came back under an hour later, mebbe 45-50 minutes and voila!

There they were, a couple of beauties, one for keeping one for gifting to a good friend.

Took out the metal pan and kept the glass one in a few more minutes (5-10), until also golden brown on top.
