Not Indian, but what the heck! Salmon Poached in a Pinch makes you healthy, wealthy, and wise

I should have taken a picture of this, it was so good and so easy and done in 12 minutes!

Fill up a large deep frying pan to the half point with water, about one and a half inches high.

Add one teaspoon crushed pepper, salt, one teaspoon coarsely crushed black pepper, one tablespoon olive oil to water. Bring to a rolling boil. Add 2 lbs. of thick filets of salmon sliced about 3 inches wide. Cover and continue to boil for 10 minutes.

While salmon is cooking place a large serving of mesclun salad on plates. Sprinkle one tablespoon each of of crumbled gorgonzola and chopped walnuts on top of the mesclun on each plate, mostly in the centre.

When salmon is done, i.e., after ten minutes, lift one piece with a slotted spoon and place on plate of salad. Drizzle lightly with a few drops of olive oil. Repeat with other pieces.

Discard poaching liquid.


You should have at least four generous servings.
